Roll-In Shawarma started with a simple bet: Ohio was ready for shawarma carved and rolled fresh, not steamed in a hotel pan.
The truck itself is a rebuilt 2004 Freightliner, gutted and outfitted from the frame up, licensed and inspected through Summit County Public Health. Every recipe on the menu was built and priced to hold up at scale.
